Spanish Chicken


  • 2 chicken breasts
  • Tub of soft cheese
  • 1 small onion
  • 1 red pepper
  • Lemon juice
  • 1 tin of chopped tomatoes
  • A handful of fresh thyme


  1. An easy way to cheat on a Spanish classic - Spanish chicken.

    Slice into two chicken breasts and put a tablespoon of soft cheese (such as Philadelphia) inside each of them.

    Fry some finely chopped onion, and then add the onions, a chopped pepper and a handful of thyme to a tin of chopped tomatoes.

    Add a drop of lemon juice if you have any, and some seasoning. Place the chicken breasts in the bag, and cover with the tomatoes. Seal the bag using the fold-over seal.

    Based on a 900w microwave, cook for five minutes, increase the time slightly if your microwave is a lower wattage. If using a conventional oven, cook at 180 degrees for 20 minutes.

    Ovens do very, please ensure food is cooked and piping hot before serving. Be aware of hot contents when opening bag, especially if serving to a child.
