THINKING-COOKING products are used the world over - sometimes under a different name, but it is the same product - and we've had some fantastic feedback from users at a supermarket in the US. The supermarket in question was giving the steam-cooking bags for oven/microwave away as part of a sustainable seafood programme that it was running in store.

I added a little olive oil, some turmeric, some salt and pepper, and a few grinds of Raley's Garlic and Herb seasoning. I microwaved it on high for two minutes, flipped the packet over, and microwaved 30 seconds more. The olive oil and the moisture in the cauliflower created a perfect no-mess sauce. "First of all, our recipe was super basic-- fresh "sustainable seafood" salmon fillets from Raley's, salt and pepper, olive oil, and fresh lemon juice. Second, the process is amazingly simple -- simply place the salmon along with the other ingredients in the steam pouch, seal it up, and place in oven at the recommended time and temperature. "I used these bags to microwave the side dish I made the 2nd night. I put a diced up sweet potato in the bag , I was sure to cut it smaller and not to overfill the bag. I closed the bag and cooked on 100% power in my microwave for 8 minutes. The sweet potato came out smelling amazing, FULLY cooked, and soft, buttery and delicious. After I was done - I simply threw the bag away! SO EASY! GREAT FOR FAST PREP! They only negative comments referred to the bag opening during the cooking process - which is actually an important part of the cooking process in a steam-cooking bag, the steam-build up would become so great that if the bag didn't vent the user would have a real problem on their hands. Incredible bag keeps fresh produce fresh

A BREATHABLE bag that keeps fruit and vegetables fresh for longer – much longer… that’s what’s on offer with the Thinking-Cooking Incredible Fruit & Veg Bag.

If you’re fed up with throwing away salad, tomatoes, mushrooms and other contents of your fridge because you’ve not had chance to eat them before they go off, then this is the product you’ve been waiting for. We don’t use the term incredible lightly.

“These bags are natural and breathable,” said Jeremy Haydn-Davies, sales director, “but more importantly they work brilliantly – keeping fruit and veg fresher for much longer.

“There’s nothing complicated, all you need to do is seal the bag. It doesn’t even need to be in the fridge, so you can even free up some space in your fridge if you want.

“The results are outstanding – the bags can add many days shelf-life, even weeks to some products – meaning you’re no longer throwing away half your weekly shop.”

Most users will be interested only in the results – and how much extra shelf-life they get. They’re probably also interested in the fact that the bag is compostable and sustainable.

However, some people will want the ‘science bit’ and we’re happy to share it.

The Thinking-Cooking Incredible Fruit & Veg Bag was developed by Sirane’s food packaging division for use in the fresh produce trade. It is a new, unique film which has worked out the optimum balance between humidity control and O2 and CO2 permeability.

The permeability is temperature dependant so that the perfect atmosphere is maintained inside the pack even if the storage temperature is variable.

Simon Balderson, Sirane’s managing director, said: “The results are remarkable. There is no condensation on the inside of the film and the fresh produce does not dry out.

“The package atmosphere is maintained with the optimum balance of atmospheric gases to prevent degradation. In simple terms, the food lasts longer – in some cases much longer.

“Shelf life extension of several days and more is achieved for many products. The film is suitable for all types of vegetables including salads as well as many types of fresh fruit.”

The film is a natural bio-polymer made from plants. It is 100% sustainable and is fully compostable. The permeability is controlled by the property of the film itself.

Due to the unique structure of the film material, the permeability to humidity, O2 and CO2 is different in each case. This has allowed Sirane’s team of scientists to balance the permeability of each component to achieve the optimum result.

 

The non-scientists among you might be struggling right now? We’ll explain. In simple terms, the bag breathes on behalf of the produce, maintaining just the right level of ‘breathing’ to allow the fruit or vegetables to last for as long as is possible. It’s almost like they’ve been put to sleep; and the result is because they are ‘asleep’ they stay alive much longer.
